Sunday funday

Since I needed to run a few errands in Birmingham, I figured I would make a day out of it.
I met my friend H from college up for brunch at Chez Lulu's. Their delicious chocolate hazelnut crepe and stoneground grits really hit the spot. Per usual I got a chocolate croissant to go.
I then met my sister to look at a few stores since I need tea cups for an upcoming party I am hosting. We foud some cute stuff in Homewood's Edgewood neighborhood. We also saw several cute things that were added to our Wish Lists.
After dropping my sister off, I went to Old Time Pottery, a store I always swore I would not visit. The vow was broken since they have glass cocktail plates for a reasonable price. Should you need to host a party for 50 people ever, hit me up because I am the proud owner of 60 glass cocktail plates.
I also stopped by Costco for some groceries.

Father's day


I just finished spending the afternoon on a local river with my father to celebrate his special day.
I grew up spending many summer days cruising the local rivers with my dad. I can always say it was an adventure.
This year was no different! My dad bought his current boat for $600 at an auction, so you can imagine the condition of it. In fact, my mother has been stuck out on the river on it so many times when it chooses to break down that she refused to go out today!


Dad and I started at an local put in spot. We rode down looking for my aunt's house on the river. We tied up on her banks and climbed up to her house. After scaring her slightly with our sudden appearance, she went for a ride.




It was a fun ride with the exception of hitting a log stirred up by a barge. We saw some pretty limestone bluffs and friends at a local sand bar.
I enjoyed spending the day with my father.

It's my birday

As my good friend put it, it's my birday! Well it was! I am now the BIG 26!

Anyways, I had a blast at my birthday parties! I am a lucky girl in that I got two celebrate twice, one with friends and the other with family!

I got some fabulous presents. I will share more over the next few days!

This month, SIL and I are throwing my MIL a surprise party for her 60th Birthday!  I am super excited, because well when have I ever not enjoyed planning a party!

You are probably thinking this post is going to be about that party, but you are WRONG!

While browsing birthday party invitations, I stumbled across a really funny one and could not resist sharing it with you!
I mean come on... I think my MIL would take offense to this one.  It definitely does not do it for me!

I promise to update you more on the party as planning progresses and the event actually happens!

Chipotle Pork Tacos

I recently took a subscription to Cooking Light, a magazine that I have long adored and loved several recipes that came from them.  I was lucky in that my sister worked for Southern Progress for a few years.  She always got magazines for free (back issues) or extremely cheap (some for $.25 - yes 25 cents an issue).  This one is one of my favorite magazines, so I finely bought a subscription. 
Boy am I glad that I did!  April 2011 issue has not disappointed me.  I have 6 or 7 recipes I cannot wait to make!

This recipe I made on Sunday for LML and myself.  Neither one of us like our food too spicy, and this dish was perfect for us...just the right amount of heat.  The chipotle peppers in adobe sauce were fantastic addition and I will be experimenting with other ways to use them!  I love their smoky flavor!

Without further delay...Enjoy this recipe...I doubled it and loved every bite!


  • 1 lb. Pork Tenderloin 
  • 1 1/2  teaspoons  finely grated lime rind
  • 1  tablespoon  fresh lime juice
  • 2  teaspoons  minced fresh oregano
  • 1  teaspoon  honey
  • 2  teaspoons  chopped chipotle chile in adobo sauce
  • 2  large cloves of garlic pressed
  • 1/4  teaspoon  salt
  • Cooking spray
  • 1  cup  thinly sliced shallots
  • 2  teaspoons  olive oil
  • 8  (6-inch) corn tortillas
  • 1/4  cup  reduced-fat sour cream
  • Chopped cilantro (optional)
  • shredded cheese (optional) - I just lightly sprinkled some cheese on the dish!

2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shallots to pan; sauté for 4 minutes or until tender. Place shallots in a large bowl. Add oil to pan. Add pork; sauté for 3 minutes or until no longer pink. Add pork to shallots.
3. Warm tortillas according to the package directions. Spoon 1/3 cup pork mixture onto each tortilla, and top each tortilla with 1 1/2 teaspoons sour cream and cilantro. Fold in half.

1. I placed a sheet of parchement paper on the counter and covered it with plastic wrap.  I then put the tenderloin, with the fat trimmed, on plastic wrap.  I covered the pork with the plastic wrap to prevent splattering.  (I also cover my meat mallet with plastic wrap to help with cleanup!)

2. I pounded the tenderloin to about 1/4-inch thickness with a smooth side of the meat mallet.  You can use a heavy frying pan if needed.  I then cut the pork into really thin strips.  (I learned the hard way to cut them as thin as possible to make them cook up faster.)
 3.  I combined lime juice and zest, salt, honey, oregano, garlic, and chopped Chipotle peppers (and some of their adobe sauce).  Then in a large bowl I poured it over the thin slices of pork and tossed to coat it all. 
4. At this point, I took time to clean up everything that had touched the pork, including washing my hands and getting a fresh cutting board.   I then thinly sliced some shallots.
5. I used a non-stick skillet over medium-high heat to cook the shallots with just a little of the cooking spray or olive oil.  Once the shallot was caramelized just slightly, I put them in a clean bowl (large enough to add the pork to once it is cooked).
 6.  I then dumped the pork into the hot skillet. I cooked the pork until there was no pink showing and dumped it into the bowl with shallots.  I tossed it to mix the shallots evenly with the pork.  
7.  I heated my tortillas in my toaster oven. (I sprinkled a little water on them and wrapped them in foil to heat them.  You can wrap in a damp paper towel and warm in the microwave or you can heat them over an open flame too!)

2. Spring is in the air...I am so excited because LML is supposed to buy my two new Hydrangea plants to replace the ones he killed last year! Nico Blue, please....

3. Besides being excited about my new plant, LML and I are switching phone carriers pronto!  Verizon works great in the rural area of Alabama near LML's job!  I am excited and cannot wait to have better reception.  I should also add that we decided (i.e. I told him) to go ahead and get me an iphone.  I am so tired of no internet at home so this solves it!  Wahoo!
Do you have any app recommends?  I have a few on my ipod but not too up on them since I just got Angry Birds this month.

4.  Speaking of Angry Birds...Can we say addictive?  I am so obessed with that game!

5. My birthday is in April and I am so excited!  I know that my 26th birthday is nothing too special, but birthdays always make me excited.  I hope to have dinner at the Bright Star with a few friends and family!  I love that place! (if you do not know, it is the oldest restaurant in Alabama and Greek style food...so delic!)

6. My good friend J's little girl is celebrating her 1st birthday in April too! I am going to take some photos for her just like I did last year right after she was born.  I will ask J if I can post a few pictures from last year to show you how precious the little one is!

7. Have a great weekend...This weekend is a low-key one for us.  Just hanging out around the house and going to look at cars to replace LML's old one finally.

Brunch in Atlanta

Before we headed back towards Bama on Sunday, my SIL, MIL and my self hit up Urban Pl8.  This place exceeded expectations (and not to mention showed me where all the fabric stores are located in Atlanta).  I highly recommend this place for you to try if you are in Atlanta, especially if you or someone in your party is on a gluten free diet.

It does not hurt that they have bottomless mimosas for $12.

My SIL and I both ordered delicious grilled chicken pesto omelette with goat cheese and roasted red pepper.  It was so delicious and was devoured quickly!  The sweet potato hash was good also!

My MIL ordered their Greek chicken omelette, but I failed to take a picture of it.

The kicker was the waitress brought the bill and we noticed we ate for $22 plus tip.  We asked the waitress about the price because we did not believe that could be correct.  She informed us that she applied this discount for scoutmob.

After I googled scoutmob, I discovered it was a discount app for iphone currently only located in select cities.  If you live in Atlanta or any of their other cities, I highly recommend checking it out!  (They have email for those not with tech savy phones!)

Out for Dinner

While in Atlanta, my SIL, MIL and myself went to eat at Wisteria Restaurant in the Virginia Highlands area of Atlanta.  It was chosen due to their multiple gluten-free items for my MIL to choose her dinner.
This Arugula, grilled apple, fried onions and pecan vinaigrette was delicious.  My SIL and I both enjoyed this meal

Overall the meal was delicious and we would definitely recommend it to anyone on a gluten free diet or not!

Scotts, Pt 4

I found three architectural facade prints that I love!  I cannot wait to frame them and find a place for them in my house.  I have wanted some for quite a long time but finally the price is right!

I also found this pretty sterling silver napkin ring to add to my collection.  I love having a lot of random napkin rings and use them when I have people over for dinner!

My sister-in-law found this fabric for a good deal.  I think she wants to recover a chair with it.

Scotts, Pt 1

This weekend my SIL, MIL and myself all went to Hotlanta to browse at Scott's Antique Market.

None of us had ever attended previously, so we were all pretty excited.  (If you do not realize, Scott's is a huge market in two buildings that houses about 3000 different vendors.)

We got up early on Saturday morning and drove over from Alabama to arrive around 10 AM.  I found a few good deals, but more than anything it was nice to just view all of the antiques.

I  had a great time and would love to go back when I have a better budget!

What am I thinking?

I am not normally one to set goals and advertise them to everyone.  It just is not my thing!  Instead, I prefer to keep to my little ole' private self!

Today, I am going to change that, I made a few goals for myself recently (and to make you know I am serious, I have taken steps to help achieve said goal already!).

1. Stop drinking my obsession...AKA Dr. Pepper - I have made it 1 week with only 1 Dr. Pepper (That is a miracle...I also have avoid my favorite fast food place where I would drive thru just to get a Dr. Pepper on their perfect ice so that helps too!)

2. Start walking regularly - My friend E and I walked twice last week for about 1.5 miles and have plans to meet up again on Tuesday for another walk (Go ME!)

3. Be a regular blogger - Yeah you are a priority now!

4. Try more new recipes, especially Gluten Free options since Hubby's fam is not gluten friendly

5. Take more pictures - This one needs some work because I have no clue where the camera charger ran off too...I hope I find it next week because with no battery charge I take no pictures

6. Finish the birthday dress for my friend J's baby...It's due by the 15th of April but I want it done by 1st of April!

7. Sign up for another sewing class...I am so excited about this hobby but I feel like I still need some direction

Some of these hobbies are possible due to the extra time I have on my hand from LML being out of town for work most days.  Well I am off to get ready for Sunday lunch then church (small hometown = Catholic church falls in the afternoon when the priest can make it!).

I am that girl

This morning is a BUSY BUSY day at work culminating a busy few months.  I am ready for tomorrow already because the craziness will cease!

In other news, I have also been working hard on my local Junior League Provisional Class project.  It is coming along but it seems to have consumed my life for a bit.

 I also started driving the Old Green Jeep.  It cracks me up because I have to let it run for a bit before I can drive it.  Then I have to only slightly press the gas pedal or else it stalls.  Did I mention it is an automatic?  I never knew a normal automatic could stall.  After about 5-6 minutes of running, the jeep is finally ready for my to really push the gas....Hence this morning, I scrambled to get it started prior to going out the door. 

It should probably be mentioned that I had to be at work quite early for me (i.e. at 7 am).  And my muffler needs work, thus makes loads of noise.  The same noise that my guy friends in my hometown pay money to have their trucks make.  You definitely can hear me before I ever reach you...This is not a vehicle made for stealth operations.

I normally pick up breakfast through a Drive-Thru on early mornings at work for myself and my coworkers to help us make it through a long day.  Today and until LML gets a new car and I get mine back, that is NOT an option!  I would have to have a back seat rider to accomplish the drive-thru!  My driver's main window does not roll down since the gears are stripped. 

At least, the little triangle window in the front does open because this makes up what I now lovingly refer to as my air-conditioner!  I also am thankful for the tape player and my ipod, since the radio does not pick up any stations. 

Despite my complaining, the jeep is not a bad vehicle and actually brings back fond memories of my father's Jeep CJ-5.  My father faithfully drove this everyday from 1977 when he bought it second hand until her inherited my great-grandmother's Bonneville in 1992.  It was disgusting and messy since it was his car.  It also needed a paint job back then (still does today) because the paint was like chalk and came off in your hand.  And it had no heat in the winter!  I still remember riding in it for my first day of school. 

My dad still has his jeep with the dent on the passenger side from where he hit a tree while I was sleeping against that window...Painful memory!  I do have to say it does make me feel better to know that my jeep actually requires a key to start it unlike my fathers. 

Anyways, BACK TO WORK!

Changes are a coming

“Let us encourage one another —and all the more as you see the day approaching” (Hebrews 10:25)
This verse has come to mean a lot to me as I approach a major change in my married life.  Recently, LML has taken a new job.  This is something that we have prayed over for quite some time.  We both have felt led to this job and feel that this job will allow him to best serve.  
In fact, LML did not even apply the first time they posted this job.  The second posting of this job was my "aha!" moment and I began to intensely encourage LML to apply.  


While this job will be a blessing in that he will have control over his work and he will be doing what he loves, it does have it's downsides.  It will take him out of town for most the week, every week.  This is going to be a HUGE adjustment, since I will be staying at the house and taking caring of things at home. 
The weekends are going to become more important, because it is going to be our time together.  Granted, this also means it his time to complete tasks that he would otherwise intersperse throughout the week.  


"Guard yourself in your spirit, and don’t break faith." (Malachi 2:16)


Therefore, I feel that I need to make a commitment to have faith in God and his plan.  I need to understand that I cannot control everything.  I also need to just believe that this job will lead to greater things for both LML and I.


I also need to commit to making LML a major priority each and every day.  I need to make him feel loved and needed even if I do not get to see his face.  I need to build him up so that every weekend, we are excited to see each other and not bringing home any frustrations from the week.

I know that while this change is not ideal, it is not impossible.

Enchilada Casserole

This casserole is one of my favorites and is always a hit when I make it for other people.  I discovered this one day when making one that would freeze well to deliver to a friend that just had a baby.  She loved it so much, I sent her the recipe.
I somehow always have some sauce left over and it make a wonderful "Mexican Spaghetti" sauce that can you can freeze for a day when you have no clue what to serve for dinner.


Serves 6 to 8
10 oz package frozen chopped spinach, thawed and drained
1 ½ lbs lean ground beef
½ onion, chopped
1 garlic clove, minced
½ tsp ground cumin
½ tsp ground red pepper
salt and black pepper to taste
14 oz diced Mexican style tomatoes
8 oz tomato sauce
4 oz diced green chiles
Juice of 1 lime
1 tsp sugar
10 (6 inch corn tortillas, quartered)
1 stick butter melted
8 oz shredded Monterrey jack or cheddar cheese
1 cup sour cream

Squeeze any excess moisture from the spinach.  Brown the ground beef with the onion, garlic, cumin, red pepper, salt and pepper in a skillet.  Stirring until the ground beef is crumbly; drain. Stir in the spinach, undrained tomatoes, tomato sauce, green chiles, lime juice and sugar.  Simmer covered for 10 minutes, stirring occasionally.
Preheat oven to 350 degrees.  Dip tortilla quarters in the melted butter and arrange ½ of them in a greased 9 by 14 inch baking. Spread with ½ of the ground beef mixture and sprinkle with ½ of the cheese. Layer with the remaining tortillas, sour cream, remaining ground beef mixture and remaining cheese and bake for 30 minutes. 

NOTE: I thought one time that since I love spinach so much, what harm would some extra spinach do.   Let me tell you that while it was edible, the proportions were not right and it was not as delicious!

Christmas Dinner

I had LML's Family over for Christmas Dinner this year, yeah can we talk about how weird it was being THAT OLD!

I mean it seems like just yesterday that I was the one so excited to see what Santa brought myself and my siblings.  In fact, I can remember pouting one year when Dad made us wait to open all of our gifts until after Christmas Dinner at our house.

This year, LML had to make me open his gift before Christmas, because I just did not have time.  I was on a schedule and trying to get everything made for Christmas Dinner.  I do have to say that everything went beautifully, except for a minor mishap with spilling heavy cream in the fridge.  That resulted in a time out to clean out the entire fridge since I spilled it on the top shelf.  (OOPS!)

I had a wonderful Christmas and throughly enjoyed visiting with my family Christmas Eve and Christmas Night. I guess we are lucky that we live so close to both of our families because we are able to juggle them on holidays for the most part.  I do refuse to drive back and forth from one town to the next, but my family was up here Christmas Eve and Christmas Night for visiting my parents siblings at their Christmas parties.

I could not have asked for a better Christmas.   I will try and post a few of my new awesome recipes that I made for Christmas over the next week .  I know that most of them are Gluten Free due to diet restrictions in LML's Family, but I would make them again for my family who eats bread likes it going out of style.  They were just that wonderful!

It's Christmas Eve!

Now, imagine me saying that in a voice filled with the excitement of the little kid!  I always love Christmas Eve.  I love going to church, I love the beginning of singing carols in both my current church and the church I grew up attending.  (FYI, Most Episcopal or Catholic Churches do not sing carols until Christmas Eve...I should know since I grew up with the first and now am a member of the latter)

Since currently I am running around the house like a chicken with my head cut off trying to get everything together (at least I am predicting this!), I pre-wrote this post for all of you.

I decided that I would post one of my recipes for Christmas Dinner tomorrow.

I am extremely huge fan of Le Puy lentils (I think I have covered this already!), so I ordered myself some to serve on Christmas Day.

I found this recipe and it just sounds delicious!  (I am an guesstimator type of cook, so I do not mind the measurements in grams)

Warm Puy Lentil Salad with Baby Spinach and Goat's Cheese
This salad, with fresh leaves, creamy goat's cheese and fine-textured lentils, makes a substantial lunch, or halve the amounts and serve as a starter.



Preparation time :10 minutes
Cooking time :25 minutes
Total time :35 minutes

Serves: 4

Ingredients

200g pack Romano peppers
225g Waitrose Cooks' Ingredients Le Puy Green Lentils
4 tbsp Carapelli Extra Virgin Olive Oil
1 red onion, sliced
2 tbsp Waitrose Balsamic Vinegar
1 tbsp fresh lemon juice
1 tsp English mustard
225g baby spinach
100g pack Capricorn Somerset Goat's Cheese, roughly chopped

Method

  1. Preheat the grill to high. Place the whole peppers on a baking sheet and place under the grill. Cook until the skins are blackened, turning occasionally. To remove the skins easily, place the hot peppers in a clean plastic food bag and seal immediately until cool enough to handle. Remove and peel the skins. Cut off the tops, deseed and cut into bite-sized pieces. (I am skipping this step and using jarred sweet peppers since time is a premium on Christmas!)
  2. Cook the lentils according to the pack instructions for about 15-20 minutes, until just tender. Drain, return to the pan and cover to keep warm. Meanwhile, heat 1 tablespoon of the oil in a frying pan and fry the onion for 4-5 minutes until softened. Remove from the heat and stir in the peppers.
  3. Whisk together the remaining oil, vinegar, lemon juice and mustard and season well. Stir the onion and peppers into the lentils and pour the dressing over.
  4. Arrange the spinach between 4 plates, spoon over the lentils and top each serving with a little goat's cheese. Serve immediately.

Another Christmas Dish has been decided

Thanks to everyone for their suggestions for what to eat on Christmas Dinner.  I have finally cemented my decision to go with Beef Tenderloin.  I am going to my local Winn*Dixie (They do live up to their reputation as the beef people) to talk to the butcher this week.  If he can get me what I want, I would prefer to order it locally.  If not, I shall be purchasing it to be delivered to my house.

In other news regarding the Christmas menu,  I have decided to splurge on purchase my favorite lentils.  I know most of you think, crazy girl is there a difference in lentils.  Believe me when I tell you this, Le Puy Lentils are superior to any other lentils.  They have the perfect texture when properly cooked (Not too soft or firm, the elusive middle ground is easy to achieve with these lentils).  I should also mention that they have a soft spot in my memory due to my trip to Le Puy en Velay, France during high school.  I love these lentils and if I had realized that not all lentils are created equally, I probably would have brought back 50 lbs of these instead of 2.  I have only had them once since high school at some fancy restaurant, where my dish was selected on the basis of eating them.  They have never disappointed.  (End Tangent)
I am planning on making a warm lentil salad with goat cheese for our salad.  Then desert is going to be a bread pudding.  I do not think I have mentioned this, but the majority of my guests are either have celiac's disease or gluten-intolerant.  Therefor, this Christmas will be gluten free.  Some of you are wondering how I plan on making a gluten free bread pudding, well I am using a bread machine and a mix.  I have tried this mix in my machine previously and it was good.  Great texture which is important to me.

Now I need to find something green to serve with dinner, probably assign this to sister in law.

My favorite Gifts to Share

With Christmas season being upon us, I thought I would recommend a few go to gifts that I regularly give to friends and family.

1. Magazines
- I love to give two different magazines for two totally different reasons.  The first one is Garden and Gun.  If you click the link here, I promise you will find a GREAT deal.  This magazine covers everything southern from hunting to home decor to recipes.  I would highly recommend this as a gift to any southern belle.

- I also love Martha Stewart Living.  This magazine covers a wide variety of items, but my favorite are the recipe and hostess tips.  I do enjoy glimpses into Martha's homes and gardens.

2. Good quality soap- What hostess does not stock their guest baths with high quality soap.  I am not saying go blow your paycheck on soap, instead I recommend the opposite.  I buy all my good soaps, most hand milled, at TJMA*X.

3. Monogrammed Hand Towels - There is a great shop down in Mobile, Alabama that I try to stop by whenever I am visiting the area to purchase monogrammed hand towels on the inexpensive side. I gave these to all the hostesses at my bridesmaids luncheon and everyone loved them!

4. A cute and flirty apron - I got one last year and let me just tell you that I LOVE it!  When I wear it, it makes me feel all cute while protecting whatever I am wearing underneath it!

Christmas Decorations

I find that people's home decor, especially holiday decor, is greatly influenced by what they grew up seeing.  

I grew up with needlepoint stockings, a real cedar tree, fresh greenery, nutcrackers and my favorite a Christmas mouse.  

Since beginning my own Christmas traditions with the LML, I have kept the needlepoint stockings, fresh greenery and nutcrackers.  I did deviate from the cedar tree since they are flimsy, but I still need that fresh tree smell.  I also like to wait and put the tree up the week prior to Christmas and leave it up until after thanksgiving.  

Another new tradition that Hubby and I are incorporating is a Fontini nativity scene.  We are actually going to get a new piece each year for a while.  In fact, so far we have the stable and the holy family.  I have to go to the store and purchase our next piece soon.

In addition, I have an extensive collection of Christmas themed music boxes that I have gotten over the years.  I start pulling these out right after thanksgiving and slowly add more Christmas decor leading up to the tree the weekend prior to Christmas.
