Chimichurri Sauce

This is one of my newest favorite condiments.  I discovered this last year, and let me say I am addicted.  Not to mention that it is SUPER EASY!


3 bunches curly parsley, chopped
6 tablespoons chopped fresh garlic (about 16 cloves)
2 Cups extra virgin olive oil
1 cup white vinegar
coarse salt and freshly ground pepper

Combine all the ingredients in a food processor and let sit for at least 2 hours before serving.  (Can be used to baste and marinate beef and as a dipping sauce)
