This month, SIL and I are throwing my MIL a surprise party for her 60th Birthday! I am super excited, because well when have I ever not enjoyed planning a party!
You are probably thinking this post is going to be about that party, but you are WRONG!
While browsing birthday party invitations, I stumbled across a really funny one and could not resist sharing it with you!

Things that make me go...OOH LA LA
I bought a cheap drink dispenser with left over gift money from my wedding. Unfortunately, I only was able to use it once, because it was leaky.
Lesson Learned: I will not buy cheap things with spigots!

Is it sad...
In one month, I took a week off from work to attend a conference with him. It turns out that we get back on that Thursday night and then he has another meeting on Friday about two hours away. He asked me to attend said meeting...
I told him No can Do! That is royal wedding day, I already have plans with the girls. Scones, tea (coffee and Irish cream for me since I will be a little tired), and staying up all night Thursday just for the wedding!
I am so excited about this wedding, and two of my friends are right there with me! In fact, A and I bought Miss M a subscription to Royalty Magazine for her Birthday! I cannot wait for her to get it, because the magazine will be passed around the three of us!

Friday
I got my new iPhone today and I am slightly obsessed! My friend made fun of me during dinner tonight.
Right now I am writing this from the comfort of my own home for the first time ever! I cannot express how excited I am to have Internet of some form at home now.
So I am writing this quick post on my sofa while LML sits next to me playing angry birds on my old iPod. The fact that I do not have to quit my game when he wants to play makes me happy.

Chipotle Pork Tacos
I recently took a subscription to Cooking Light, a magazine that I have long adored and loved several recipes that came from them. I was lucky in that my sister worked for Southern Progress for a few years. She always got magazines for free (back issues) or extremely cheap (some for $.25 - yes 25 cents an issue). This one is one of my favorite magazines, so I finely bought a subscription.
Boy am I glad that I did! April 2011 issue has not disappointed me. I have 6 or 7 recipes I cannot wait to make!
This recipe I made on Sunday for LML and myself. Neither one of us like our food too spicy, and this dish was perfect for us...just the right amount of heat. The chipotle peppers in adobe sauce were fantastic addition and I will be experimenting with other ways to use them! I love their smoky flavor!
Without further delay...Enjoy this recipe...I doubled it and loved every bite!
- 1 lb. Pork Tenderloin
- 1 1/2 teaspoons finely grated lime rind
- 1 tablespoon fresh lime juice
- 2 teaspoons minced fresh oregano
- 1 teaspoon honey
- 2 teaspoons chopped chipotle chile in adobo sauce
- 2 large cloves of garlic pressed
- 1/4 teaspoon salt
- Cooking spray
- 1 cup thinly sliced shallots
- 2 teaspoons olive oil
- 8 (6-inch) corn tortillas
- 1/4 cup reduced-fat sour cream
- Chopped cilantro (optional)
- shredded cheese (optional) - I just lightly sprinkled some cheese on the dish!
2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shallots to pan; sauté for 4 minutes or until tender. Place shallots in a large bowl. Add oil to pan. Add pork; sauté for 3 minutes or until no longer pink. Add pork to shallots.
3. Warm tortillas according to the package directions. Spoon 1/3 cup pork mixture onto each tortilla, and top each tortilla with 1 1/2 teaspoons sour cream and cilantro. Fold in half.
1. I placed a sheet of parchement paper on the counter and covered it with plastic wrap. I then put the tenderloin, with the fat trimmed, on plastic wrap. I covered the pork with the plastic wrap to prevent splattering. (I also cover my meat mallet with plastic wrap to help with cleanup!)
2. I pounded the tenderloin to about 1/4-inch thickness with a smooth side of the meat mallet. You can use a heavy frying pan if needed. I then cut the pork into really thin strips. (I learned the hard way to cut them as thin as possible to make them cook up faster.)
3. I combined lime juice and zest, salt, honey, oregano, garlic, and chopped Chipotle peppers (and some of their adobe sauce). Then in a large bowl I poured it over the thin slices of pork and tossed to coat it all.
4. At this point, I took time to clean up everything that had touched the pork, including washing my hands and getting a fresh cutting board. I then thinly sliced some shallots.
5. I used a non-stick skillet over medium-high heat to cook the shallots with just a little of the cooking spray or olive oil. Once the shallot was caramelized just slightly, I put them in a clean bowl (large enough to add the pork to once it is cooked).
6. I then dumped the pork into the hot skillet. I cooked the pork until there was no pink showing and dumped it into the bowl with shallots. I tossed it to mix the shallots evenly with the pork.
7. I heated my tortillas in my toaster oven. (I sprinkled a little water on them and wrapped them in foil to heat them. You can wrap in a damp paper towel and warm in the microwave or you can heat them over an open flame too!)

Oh La La!
I love shoes! I really like the wedge style that is back in this spring. I bought myself a pair of red wedges when I was in Atlanta. Here are some eye candy that I found lately!

While I am not a fan of ankle straps since it tends to cut off your legs. This not due to being shorts, but I like to think my legs are one of my better features. I like to highlight and make the most of my best features, and ankle straps do not do this.
BUT I really like this shoe and if I had the budget, I would definitely be ordering them.

How do you fold your sheets?
I hate folding laundry, especially fitted sheets. My fitted sheets always look like jumbled mess!
When I saw this video, I could not help but to laugh at how simple it looks! I am not saying that I am excited about washing the sheets next, but I do dread them a little less.

Chair Love
I love to look at chairs in general, especially ones with upholstery. I am drawn to two styles, ones with clean lines (not shown today) and those more ornate styles that reference French antiques. I really love Louis XV, but since my grandmother has so much of it, I do not seeing it work the expense at this moment.

Brain Dump
I finally finished up my posts about my weekend in Atlanta and here goes a brain dump on stuff that I have been wanting to share:
1. SIL - Since you never read emails, I figured you would check this out eventually. Here are two things you need to think about:

2. Spring is in the air...I am so excited because LML is supposed to buy my two new Hydrangea plants to replace the ones he killed last year! Nico Blue, please....
3. Besides being excited about my new plant, LML and I are switching phone carriers pronto! Verizon works great in the rural area of Alabama near LML's job! I am excited and cannot wait to have better reception. I should also add that we decided (i.e. I told him) to go ahead and get me an iphone. I am so tired of no internet at home so this solves it! Wahoo!
Do you have any app recommends? I have a few on my ipod but not too up on them since I just got Angry Birds this month.

Brunch in Atlanta
Before we headed back towards Bama on Sunday, my SIL, MIL and my self hit up Urban Pl8. This place exceeded expectations (and not to mention showed me where all the fabric stores are located in Atlanta). I highly recommend this place for you to try if you are in Atlanta, especially if you or someone in your party is on a gluten free diet.
It does not hurt that they have bottomless mimosas for $12.
My SIL and I both ordered delicious grilled chicken pesto omelette with goat cheese and roasted red pepper. It was so delicious and was devoured quickly! The sweet potato hash was good also!
My MIL ordered their Greek chicken omelette, but I failed to take a picture of it.
The kicker was the waitress brought the bill and we noticed we ate for $22 plus tip. We asked the waitress about the price because we did not believe that could be correct. She informed us that she applied this discount for scoutmob.
After I googled scoutmob, I discovered it was a discount app for iphone currently only located in select cities. If you live in Atlanta or any of their other cities, I highly recommend checking it out! (They have email for those not with tech savy phones!)

Out for Dinner
While in Atlanta, my SIL, MIL and myself went to eat at Wisteria Restaurant in the Virginia Highlands area of Atlanta. It was chosen due to their multiple gluten-free items for my MIL to choose her dinner.

Scotts, Pt 4
I found three architectural facade prints that I love! I cannot wait to frame them and find a place for them in my house. I have wanted some for quite a long time but finally the price is right!
I also found this pretty sterling silver napkin ring to add to my collection. I love having a lot of random napkin rings and use them when I have people over for dinner!
My sister-in-law found this fabric for a good deal. I think she wants to recover a chair with it.

Scotts, Pt 2 (Sewing Sundays Edition!)
One of my favorite things to browse at antique shows and such is linens. I love to see their monograms and Scott's did not disappoint!
I thought the following monograms were spectacular! I am working on hand monogramming and would love to do linens with one like the first one below!

Scotts, Pt 1
This weekend my SIL, MIL and myself all went to Hotlanta to browse at Scott's Antique Market.
None of us had ever attended previously, so we were all pretty excited. (If you do not realize, Scott's is a huge market in two buildings that houses about 3000 different vendors.)
We got up early on Saturday morning and drove over from Alabama to arrive around 10 AM. I found a few good deals, but more than anything it was nice to just view all of the antiques.
I had a great time and would love to go back when I have a better budget!
